You can buy the seasoning from the store, or you can make it from your own herbs. Use this in holiday cooking, for turkey, chicken, pheasant or other foul. The recipe is from my book,

Poultry Seasoning(all herbs should be dried)2 tablespoons sage1 tablespoon thyme1 tablespoon rosemaryPulverize well in food processor. Use 2 teaspoons per average-sized chicken (2-3 pounds). Add 2-3 teaspoons for making chicken or turkey stock, and add to taste for cornbread stuffing.

just tried it as it's chrismas eve and realized we had no poultry seasoning to make our stuffing, and it's definitely too late to try and buy some somewhere. This was one of the first results i got (coincidentally one of the only ones i actually had most of the stuff to make it) so i gave it a shot. We didn't have thyme so we substituted parsley, but it turned out awesome. Also used a bit of ginger(to help with indigestion, so everyone can enjoy your stuffing), some chicken soup powder, a little salt and pepper and a bunch of butter with onion cooked in with it. then pour the butter/onion all over everything.
I used this in homemade cream of chicken soup and it was very good. Thank you for the recipe!
